Ingredients

Scale
  • 1 lb fresh salmon fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 2 cups cooked jasmine or brown rice
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the salmon fillets into bite-sized pieces and season with salt and pepper.
  3. Set up three bowls: one with flour, one with a beaten egg, and the last with panko breadcrumbs mixed with a pinch of salt. Dip each salmon piece in flour, then egg, followed by the panko until fully coated.
  4. Place the breaded salmon on the baking sheet and bake for 12-15 minutes until golden brown.
  5. While baking, mix mayonnaise, sweet chili sauce, and sriracha in a bowl for the sauce.
  6. Once cooked, assemble bowls by placing rice at the bottom, topping with crispy salmon bites, drizzling with sauce, and adding fresh veggies.
