- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 medium sweet potatoes (about 1.5 lbs)
- 2 tbsp olive oil
- 1/2 cup BBQ sauce (your favorite variety)
- 2 cloves fresh garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper. Peel and cube the sweet potatoes.
- Toss sweet potatoes in olive oil, salt, and pepper; spread them evenly in the baking dish.
- In a skillet over medium heat, sear chicken for 3-4 minutes on each side until golden brown.
- Nestle chicken among sweet potatoes in the baking dish; drizzle BBQ sauce over both. Bake for 25-30 minutes until fully cooked.
- Sauté the chopped bell peppers and onion in the same skillet until tender (about 5 minutes).
- Once cooked, slice the chicken and assemble bowls with sweet potatoes, veggies, and additional BBQ sauce as desired.
