  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 medium sweet potatoes (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1/2 cup BBQ sauce (your favorite variety)
  • 2 cloves fresh garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. Peel and cube the sweet potatoes.
  3. Toss sweet potatoes in olive oil, salt, and pepper; spread them evenly in the baking dish.
  4. In a skillet over medium heat, sear chicken for 3-4 minutes on each side until golden brown.
  5. Nestle chicken among sweet potatoes in the baking dish; drizzle BBQ sauce over both. Bake for 25-30 minutes until fully cooked.
  6. Sauté the chopped bell peppers and onion in the same skillet until tender (about 5 minutes).
  7. Once cooked, slice the chicken and assemble bowls with sweet potatoes, veggies, and additional BBQ sauce as desired.
