  • 4 oz fresh or dried ramen noodles
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup carrots, julienned
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil (plus more for drizzling)
  • 1 tbsp brown sugar

Instructions

  1. Slice the beef sirloin against the grain into thin strips. Prepare bell peppers and julienne the carrots.
  2. Boil water and cook ramen noodles according to package instructions until just tender. Drain and toss with a little sesame oil.
  3. Heat oil in a large skillet over medium-high heat. Sauté garlic and ginger until fragrant (about 1 minute).
  4. Add beef to the pan, cooking until browned but juicy (about 3 minutes). Stir frequently.
  5. Toss in bell peppers and carrots; stir-fry for about 5 minutes until crisp-tender.
  6. Add soy sauce mixed with brown sugar and cooked ramen noodles; toss gently until evenly coated. Drizzle with sesame oil before serving.
