  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz Boursin cheese (garlic & herbs variety)
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice

Instructions

  1. 1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. 2. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear each side for 5-7 minutes until golden brown.
  3. 3. Remove chicken from skillet and sauté cherry tomatoes and spinach for about 3 minutes until spinach wilts.
  4. 4. Add chicken broth and lemon juice to the skillet; stir well.
  5. 5. Return chicken to the skillet, top with Boursin cheese, then transfer everything to the baking dish.
