Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss the cubed butternut squash with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25 minutes until tender.
- While the squash roasts, cook the pasta in salted water according to package directions until al dente. Drain and set aside.
