  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 ½ cups shredded carrots (about 3 medium carrots)
  • 2 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a greased springform pan.
  2. In another bowl, beat cream cheese and granulated sugar until smooth. Add sour cream and mix well before adding eggs one at a time.
  3. Fold in shredded carrots, cinnamon, and nutmeg until evenly distributed.
  4. Pour filling over the crust in the springform pan. Bake for 50-60 minutes or until slightly set but still jiggly in the center.
  5. Allow the cheesecake to cool at room temperature for about an hour before refrigerating for at least four hours or overnight.
  6. Serve chilled; drizzle with caramel sauce or top with whipped cream if desired.
