  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until fluffy. Beat in the egg and vanilla until fully incorporated.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined. Fold in the chocolate chips.
  4. For the cheesecake filling, beat together the cream cheese, sour cream, powdered sugar, and vanilla until smooth.
  5. Scoop about two tablespoons of cookie dough and flatten it slightly. Place one tablespoon of cheesecake filling in the center, fold the dough over it completely, and roll it into a ball.
  6. Place on the prepared baking sheet and bake for about 10 minutes or until golden around the edges but soft in the middle. Allow to cool slightly before transferring to wire racks.
