  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1 cup bell peppers, sliced (mixed colors)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup barbecue sauce (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Place each chicken breast between plastic wrap and pound to about half an inch thick.
  3. Drizzle olive oil over the chicken breasts and sprinkle with salt and pepper.
  4. Layer spinach, bell pepper strips, and mozzarella cheese evenly on each chicken breast.
  5. Roll each breast tightly around the filling and secure with toothpicks if needed.
  6. Place the roll-ups seam-side down in the prepared baking dish and bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (75°C).
