  • 1 cup wild rice blend
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the ingredients by dicing the carrots, celery, onion, and mincing the garlic. Cut chicken into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. Add chicken pieces to the pot and brown for about 7 minutes.
  4. Pour in chicken broth, thyme, bay leaves, and bring to a gentle boil. Stir in wild rice, reduce heat to low, cover, and simmer for about 45 minutes until rice is tender.
  5. Mix in diced carrots and celery along with heavy cream. Season with salt and pepper before serving hot.
