  • 3 lbs beef chuck roast, cut into 1-inch cubes
  • 6 dried ancho chiles, stems and seeds removed
  • 6 cloves fresh garlic
  • 1 medium onion, chopped
  • 1 tsp cumin powder
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Toast the dried ancho chiles in a skillet over medium heat until fragrant (about 2 minutes).
  2. Blend toasted chiles with garlic, onion, cumin, tomato paste, and chicken broth until smooth.
  3. Brown seasoned beef chuck roast in oil over medium-high heat until browned on all sides (about 5 minutes per batch).
  4. Return browned beef to the pot; pour blended sauce over meat, adding additional broth if needed to cover.
  5. Bring to a gentle boil then reduce heat to low. Cover and simmer for at least 2 hours until meat is tender.
  6. Adjust seasoning if necessary before serving with tortillas or rice.
