  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1/2 cup freshly squeezed lime juice (about 3 limes)
  • 2 cups cooked rice (white or brown)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with cooking spray.
  2. Season chicken breasts with salt and pepper. In a bowl, combine lime juice, soy sauce, honey, minced garlic, and chopped cilantro to create the marinade.
  3. Marinate the chicken in half of the marinade in a zip-top bag for at least 30 minutes.
  4. Cook rice according to package instructions while the chicken marinates.
  5. Place marinated chicken in the baking dish and pour remaining marinade over it. Bake for about 25-30 minutes until fully cooked.
  6. Let the chicken rest for a few minutes before slicing. Serve over rice and garnish with additional cilantro and lime wedges.
