  • 3/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp cinnamon sugar mixture (1 tbsp sugar + 1 tsp cinnamon)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and a pinch of salt.
  3. Cream softened butter and brown sugar in a large bowl until fluffy.
  4. Beat in eggs one at a time, adding vanilla extract until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon sugar mixture on top, then add remaining batter and finish with more cinnamon sugar.
  7. Bake for 25-30 minutes until golden brown; let cool before slicing.
