  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 8 oz pasta (spaghetti or fettuccine)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente (8-10 minutes). Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, stirring to combine while scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer.
  5. Slice the rested chicken, add it back into the skillet along with cooked pasta and Parmesan cheese. Toss everything together until well coated.
  6. Serve warm, garnished with extra Parmesan if desired.
