  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1 cup plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 large egg
  • ½ cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a large bowl, combine ground turkey, spinach, breadcrumbs, Parmesan cheese, minced garlic, egg, salt, and pepper.
  3. Shape the mixture into golf ball-sized meatballs and place them in the baking dish.
  4. Bake for 20–25 minutes until golden brown.
  5. Meanwhile, in a saucepan over medium heat, mix chicken broth, heavy cream, and Dijon mustard; simmer until well combined.
