- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup oil-packed sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil for searing
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper. Sear in a skillet with olive oil until golden brown, about 5 minutes per side. Remove from skillet.
- In the same skillet, add garlic and sun-dried tomatoes; sauté for 2 minutes until fragrant.
- Pour in heavy cream and stir in Italian seasoning. Simmer until slightly thickened.
- Add spinach and stir until wilted. Return chicken to skillet and pour sauce over it.
- Transfer the skillet to the preheated oven and bake for 20 minutes or until chicken is fully cooked.
