  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup carrots, chopped
  • 4 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat and transfer to the Crockpot.
  2. In the same skillet, sauté chopped onions and minced garlic until fragrant. Add to the Crockpot.
  3. Add diced potatoes and chopped carrots to the Crockpot.
  4. Pour in enough beef broth to cover all ingredients by about an inch. Season with salt and pepper.
  5. Set the Crockpot on low for 6 hours or high for 3 hours.
  6. About 30 minutes before serving, stir in heavy cream and shredded cheddar cheese until melted and creamy.
