- 1 lb thinly sliced sirloin or ribeye beef
- 4 medium russet potatoes, thinly sliced
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium yellow onion, chopped
- 2 cups provolone or cheddar cheese, shredded
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
Instructions
- Slice potatoes and chop bell peppers and onions.
- In the crockpot, layer half of the potatoes at the bottom. Add half of the beef slices followed by half of the peppers and onions.
- Drizzle half of the beef broth mixed with Worcestershire sauce over the layers. Repeat with remaining ingredients.
- Top generously with cheese.
- Cover and cook on low for 6 hours until everything is tender.
