Ingredients

  • 1 lb thinly sliced sirloin or ribeye beef
  • 4 medium russet potatoes, thinly sliced
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 2 cups provolone or cheddar cheese, shredded
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce

Instructions

  1. Slice potatoes and chop bell peppers and onions.
  2. In the crockpot, layer half of the potatoes at the bottom. Add half of the beef slices followed by half of the peppers and onions.
  3. Drizzle half of the beef broth mixed with Worcestershire sauce over the layers. Repeat with remaining ingredients.
  4. Top generously with cheese.
  5. Cover and cook on low for 6 hours until everything is tender.
  6. Serve warm and enjoy!
