  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 cup frozen peas
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Chop onions, carrots, and celery into bite-sized pieces.
  2. Place chicken breasts at the bottom of the crockpot and layer chopped vegetables on top.
  3. Pour in chicken broth until everything is submerged; sprinkle thyme over the top.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, mix flour, baking powder, milk, salt, and pepper in a bowl. Drop spoonfuls of dough onto bubbling broth.
  6. Add frozen peas during the last five minutes of cooking. Serve hot.
