- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cups low-sodium chicken broth
- 1 cup long-grain white rice
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cloves fresh garlic, minced
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Dice the onion, carrots, celery, and mince the garlic.
- In a crockpot, layer the diced vegetables at the bottom and place the chicken breasts on top.
- Pour in the chicken broth and soy sauce. Season with salt and pepper.
- Add rice directly into the pot; do not pre-cook.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
- Shred the chicken in the pot, stir well, and serve hot.
