Description

Crockpot Chicken and Rice Soup is the ultimate comfort food that combines tender chicken, fluffy rice, and vibrant vegetables simmered slowly in a savory broth.


Ingredients

  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves fresh garlic, minced
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Dice the onion, carrots, celery, and mince the garlic.
  2. In a crockpot, layer the diced vegetables at the bottom and place the chicken breasts on top.
  3. Pour in the chicken broth and soy sauce. Season with salt and pepper.
  4. Add rice directly into the pot; do not pre-cook.
  5. Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
  6. Shred the chicken in the pot, stir well, and serve hot.
