- 3 cups mixed bell peppers (red, yellow, green), chopped
- 1 medium yellow onion, sliced thinly
- 4 cloves garlic, minced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 tbsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop the bell peppers and slice the onion; mince the garlic.
- Layer the chicken breasts at the bottom of the crockpot.
- Add the chopped bell peppers and sliced onion on top of the chicken.
- Sprinkle minced garlic over the vegetables.
- Pour the diced tomatoes with juices and drizzle olive oil over everything.
- Season with Italian seasoning, salt, and pepper; mix gently.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred chicken in the pot before serving; enjoy over rice or pasta.
