Description

Crockpot Italian Chicken and Peppers is a hearty, slow-cooked dish that combines juicy chicken breasts, colorful bell peppers, and savory Italian herbs.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cups mixed bell peppers (red, yellow, green), chopped
  • 1 medium yellow onion, sliced thinly
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the bell peppers and slice the onion; mince the garlic.
  2. Layer the chicken breasts at the bottom of the crockpot.
  3. Add the chopped bell peppers and sliced onion on top of the chicken.
  4. Sprinkle minced garlic over the vegetables.
  5. Pour the diced tomatoes with juices and drizzle olive oil over everything.
  6. Season with Italian seasoning, salt, and pepper; mix gently.
  7. Cover and cook on low for 6-8 hours or high for 4 hours.
  8. Shred chicken in the pot before serving; enjoy over rice or pasta.
