  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), cubed
  • 2 ripe avocados, sliced
  • 4 cloves fresh garlic, minced
  • 3 tbsp olive oil (divided)
  • 1/4 cup fresh cilantro
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper; spread evenly in the baking dish. Bake for 25-30 minutes, flipping halfway through.
  3. Season chicken breasts with salt, pepper, and minced garlic. Cook in a skillet over medium heat for about 6 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  4. Blend cilantro, lime juice, remaining olive oil, garlic powder, cumin, salt, and pepper in a blender until smooth to make the mojo sauce.
  5. Assemble bowls by layering sweet potatoes at the bottom, adding sliced chicken on top, and finishing with avocado slices and mojo sauce.
