- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 cups carrots, sliced
- 2 cups celery, diced
- 8 cups low-sodium chicken broth
- 6 oz wide egg noodles
- 1/4 cup fresh thyme leaves
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
Instructions
- Dice the carrots and celery. Mince the garlic.
- In a large pot over medium heat, add olive oil. Season and sear the chicken breasts until golden brown for about 5 minutes on each side. Remove and let rest.
- In the same pot, add additional olive oil if needed. Sauté the carrots, celery, and garlic for about 3-5 minutes until softened.
- Pour in the chicken broth and bring to a simmer. Add thyme and shredded chicken back to the pot.
- Stir in egg noodles and cook until al dente, about 6 minutes. Finish with parsley.
- Serve hot with extra herbs on top.
