  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 3 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sear chicken for 3-4 minutes on each side until golden brown.
  3. In a bowl, mix heavy cream, Dijon mustard, minced garlic, thyme, and chicken broth until smooth.
  4. Toss halved baby potatoes with olive oil, salt, pepper, and thyme; spread them in the baking dish.
  5. Place seared chicken on top of potatoes and pour sauce over everything.
  6. Cover with foil and bake for 25-30 minutes. Remove foil in the last 5 minutes to brown the top.
  7. Serve with extra sauce drizzled on top alongside your favorite vegetables or bread.
