  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 10 corn tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup sour cream (optional: add lime juice)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, mix salt, pepper, cumin, and chili powder. Toss in the chicken breasts until evenly coated.
  3. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes per side until golden brown and cooked through. Let cool slightly before shredding.
  4. Mix shredded chicken with half of the cheese.
  5. Warm tortillas slightly to make pliable. Spoon chicken mixture onto each tortilla and roll tightly, placing seam-side down in the prepared baking dish.
  6. Top with remaining cheese and bake for 15-20 minutes or until golden brown.
