  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 10 corn tortillas
  • 1 cup vegetable oil (for frying)
  • ½ cup sour cream
  • ½ cup salsa

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray. Season chicken with salt and pepper.
  2. In a skillet over medium heat, add oil and cook chicken for 6-7 minutes per side until fully cooked. Let cool slightly and shred.
  3. In a bowl, mix shredded chicken with garlic, onion powder, cumin, and desired spices.
  4. Place about two tablespoons of the mixture on each tortilla and roll tightly. Repeat until filled.
  5. Heat oil in a skillet over medium heat. Fry taquitos seam-side down for about 3-4 minutes per side until golden brown.
  6. Transfer to paper towel-lined plates to drain excess oil. Serve hot topped with sour cream and salsa.
