- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 tsp onion powder
- 1 tsp ground cumin
- 10 corn tortillas
- 1 cup vegetable oil (for frying)
- ½ cup sour cream
- ½ cup salsa
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray. Season chicken with salt and pepper.
- In a skillet over medium heat, add oil and cook chicken for 6-7 minutes per side until fully cooked. Let cool slightly and shred.
- In a bowl, mix shredded chicken with garlic, onion powder, cumin, and desired spices.
- Place about two tablespoons of the mixture on each tortilla and roll tightly. Repeat until filled.
- Heat oil in a skillet over medium heat. Fry taquitos seam-side down for about 3-4 minutes per side until golden brown.
- Transfer to paper towel-lined plates to drain excess oil. Serve hot topped with sour cream and salsa.
