  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Halve the butternut squashes lengthwise and scoop out the seeds. Place them cut-side up in the baking dish.

  6. Return stuffed squashes to the oven for an additional 5 minutes to meld flavors.
