- 2 yellow onions, chopped
- 4 cloves garlic, minced
- 3 carrots, cut into thick chunks
- 4 Yukon Gold potatoes, quartered
- 2 cups low-sodium beef broth
- 1 cup dry red wine
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C). Heat olive oil in a Dutch oven over medium-high heat. Season chuck roast with salt and pepper; sear on all sides until browned (about 3-4 minutes per side). Remove and set aside.
- In the same pot, add onions and garlic; sauté until translucent (about 5 minutes).
- Return the roast to the pot and add carrots, potatoes, broth, wine, and herbs. Bring to a simmer while stirring occasionally.
- Cover the pot and transfer to the oven. Cook for about 3 hours or until the meat is fork-tender.
