  • 3 lbs beef chuck roast
  • 2 tbsp extra virgin olive oil
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup dry red wine
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven over medium-high heat, add olive oil. Season the beef chuck roast generously with salt and pepper. Sear each side for about 4 minutes until golden brown.
  3. Remove the beef from the pot and sauté chopped onions and minced garlic in the remaining oil until soft and fragrant.
  4. Deglaze the pot with red wine, scraping up any browned bits. Bring to a simmer before returning the beef to the pot.
  5. Add carrots, celery, broth, thyme, and rosemary around the roast.
  6. Cover and transfer to the oven. Slow cook for approximately 4 hours or until fork-tender.
