  • 2 cups spiralized zucchini (zoodles)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare zucchini noodles using a spiralizer or vegetable peeler. Place in a colander and sprinkle with salt to remove excess moisture.
  2. Dice the cherry tomatoes, cucumber, red onion, and avocado into bite-sized pieces.
  3. In a large bowl, combine the zucchini noodles and chopped vegetables. Gently fold in feta cheese and olives.
  4. In a small bowl or jar, whisk together olive oil, lemon juice, oregano, salt, and pepper. Drizzle over the salad and mix well.
