  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 medium sweet potatoes (about 1.5 lbs)
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken with salt and pepper.
  3. Peel and cube sweet potatoes; toss with olive oil and salt, then spread on one side of the baking dish.
  4. In a bowl, whisk together maple syrup, Dijon mustard, soy sauce, and minced garlic.
  5. Place seasoned chicken on the other side of the baking dish; pour half of the sauce over the chicken.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are tender.
  7. Drizzle remaining sauce over the dish before serving.
