  • 2 cups fresh corn kernels (about 4 ears)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and grill or roast until slightly charred (about 20 minutes at 400°F). Allow to cool before cutting off the kernels.
  2. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper. Mix until smooth.
  3. Fold in the grilled corn kernels, cheddar cheese, and cilantro until well combined.
  4. Chill in the refrigerator for at least one hour to allow flavors to meld.
