- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1/2 cup BBQ sauce
- 2 cups chicken broth
- 2 tsp olive oil
Instructions
- Prepare ingredients by chopping sausages into bite-sized pieces and slicing the bell peppers and onion. Mince the garlic.
- In a large skillet over medium heat, add olive oil and sauté the sausages until golden brown (about 5 minutes). Add onions and bell peppers; cook until softened (another 5 minutes). Stir in minced garlic during the last minute.
- Add uncooked rice to the mixture, stirring to coat with juices. Pour in chicken broth and BBQ sauce.
- Increase heat to bring everything to a gentle boil. Reduce heat to low, cover with a lid, and simmer for about 20 minutes or until liquid is absorbed and rice is cooked through.
