This easy-to-follow recipe is perfect for busy weeknights, delivering a hearty meal in under an hour. With its vibrant presentation and mouthwatering aroma, this dish promises to impress family and friends while making dinner a delightful experience.

Ingredients

Scale
  • 12 oz smoked sausage (chicken, pork, or beef)
  • 1 cup long-grain white rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup BBQ sauce
  • 2 cups chicken broth
  • 2 tsp olive oil

Instructions

  1. Prepare ingredients by chopping sausages into bite-sized pieces and slicing the bell peppers and onion. Mince the garlic.
  2. In a large skillet over medium heat, add olive oil and sauté the sausages until golden brown (about 5 minutes). Add onions and bell peppers; cook until softened (another 5 minutes). Stir in minced garlic during the last minute.
  3. Add uncooked rice to the mixture, stirring to coat with juices. Pour in chicken broth and BBQ sauce.
  4. Increase heat to bring everything to a gentle boil. Reduce heat to low, cover with a lid, and simmer for about 20 minutes or until liquid is absorbed and rice is cooked through.
  5. Remove from heat and let sit for 5 minutes before fluffing with a fork. Serve warm.
