  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 24 oz (3 packages) full-fat cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, at room temperature
  • ½ cup unsweetened cocoa powder
  • 1 tsp pure mint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan with cooking spray.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add sour cream and eggs one at a time, mixing well after each addition. Stir in cocoa powder and mint extract until combined.
  4. Fold in chocolate chips and pour filling over the crust. Bake for 50-60 minutes until edges are set but center is slightly jiggly.
  5. Cool at room temperature before refrigerating for at least four hours or overnight. Slice and serve chilled.
