Ingredients

  • 1 cup cream cheese (full-fat)
  • ½ cup granulated sugar
  • ½ cup shelled pistachios (crushed)
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 1 cup graham cracker crumbs
  • ¼ cup melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of dome molds. Bake for 10 minutes until golden brown; cool completely.
  2. In a mixing bowl, beat cream cheese and sugar until smooth. Gradually add heavy cream, beating until light and fluffy.
  3. Gently fold in crushed pistachios and fresh raspberries.
  4. Spoon cheesecake mixture into cooled crusts, smoothing tops as desired.
  5. Cover and chill in the refrigerator for at least four hours or overnight.
  6. Carefully remove from molds before serving, garnishing with extra raspberries if desired.
