Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup wild rice blend
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté diced onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and sauté for another minute.
  2. Stir in the wild rice blend and vegetable broth. Bring to a boil, then reduce heat to simmer for 30–40 minutes until rice is tender.
  3. Add pumpkin puree and coconut milk to the pot. Season with cinnamon, nutmeg, salt, and pepper; stir well.
  4. Simmer on low heat for another 10 minutes to meld flavors together.
  5. Taste and adjust seasonings as necessary before serving.
