Description

Red, White and Blue Pinwheel Icebox Cookies are a festive delight perfect for celebrating Independence Day or any summer gathering. These cookies feature vibrant red and blue swirls nestled in a buttery vanilla dough, making them as visually appealing as they are delicious. Ideal for picnics and parties, they can be made ahead of time and stored, ensuring that you impress your guests without the last-minute rush.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Red food coloring (gel preferred)
  • Blue food coloring (gel preferred)
  • Optional: Rainbow sprinkles for decoration

Instructions

  1. In a mixing bowl, cream together the softened butter and sugar until fluffy, about 2 minutes.
  2. Add the eggs one at a time along with the vanilla extract; mix until fully combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Divide the dough into three portions: keep one plain, color one red, and one blue using food coloring. Wrap each portion in plastic wrap and refrigerate for 1 hour.
  5. Roll each portion between parchment sheets into rectangles about 1/4 inch thick. Layer them in the order of white-red-blue.
  6. Roll tightly into a log shape using parchment paper for support, then wrap in plastic wrap and freeze for at least 2 hours.
  7. Preheat the oven to 350°F (175°C). Slice the chilled log into rounds about 1/2 inch thick and place on parchment-lined baking sheets.
  8. Bake for approximately 10 minutes until edges are set but centers remain soft.
