  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium carrots, chopped
  • 1 medium zucchini, chopped
  • 1 bell pepper (any color), chopped
  • 1 small red onion, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the carrots, zucchini, bell pepper, and red onion into bite-sized pieces.
  3. In a large bowl, combine the chopped vegetables and chickpeas. Drizzle with olive oil and season with garlic powder, cumin, salt, and pepper. Toss well to coat evenly.
  4. Spread the mixture evenly on a baking sheet in a single layer. Roast for 25-30 minutes until tender and caramelized.
