Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup salsa verde
  • 1 cup long-grain rice
  • 4 cups low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Season chicken breasts with salt and pepper. In a large pot over medium heat, add olive oil and sauté chicken until golden brown on both sides (about 5 minutes).
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Pour in chicken broth and salsa verde; bring to a gentle boil and simmer for about 10 minutes.
  4. Stir in long-grain rice; cover and cook for about 15 minutes or until rice is tender.
  5. Remove chicken from the pot, shred it with two forks, and return it to the soup.
  6. Add extra salsa verde and lime juice before serving, garnishing with cilantro.
