  • 2 cups fresh broccoli florets
  • 1 cup uncooked long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and coat a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the diced chicken in olive oil until cooked through and lightly browned (about 7-10 minutes). Season with salt and pepper.
  3. Add the diced onion and minced garlic to the skillet; cook until the onions are translucent (about 3-4 minutes).
  4. In a large bowl, combine the cooked chicken mixture with broccoli florets, rice, chicken broth, cream of mushroom soup, soy sauce, and half of the cheddar cheese; mix well.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
