  • 3 cups boneless, skinless chicken breasts (diced)
  • 2 cups fresh broccoli florets
  • 1 cup uncooked long-grain white rice
  • 1 cup shredded sharp cheddar cheese
  • 2 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté diced chicken until golden brown, about 7-10 minutes. Set aside.
  3. In a large bowl, combine uncooked rice and chicken broth; stir in garlic powder and onion powder. Pour into the prepared baking dish.
  4. Layer sautéed chicken and fresh broccoli on top of the rice mixture. Dollop sour cream and sprinkle shredded cheddar cheese over it.
  5. Cover with aluminum foil and bake for about 30 minutes. Remove foil to let the cheese bubble up beautifully for an additional 10 minutes.
  6. Serve warm, drizzled with soy sauce if desired.
