- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1.5 lbs small potatoes (baby potatoes or Yukon Gold)
- 3 tbsp olive oil
- Juice of 2 fresh lemons (about 1/3 cup)
- 1/4 cup balsamic vinegar
- 1 tsp dried Italian herbs
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp honey
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a bowl, whisk together olive oil, lemon juice, balsamic vinegar, garlic powder, honey, salt, pepper, and dried herbs.
- Marinate chicken in half of the marinade for at least 20 minutes.
- While marinating, wash and halve the potatoes if large; toss them in the remaining marinade.
- Place marinated chicken on one side of the baking sheet and arrange potatoes on the other side.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F and potatoes are tender.
