  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1.5 lbs small potatoes (baby potatoes or Yukon Gold)
  • 3 tbsp olive oil
  • Juice of 2 fresh lemons (about 1/3 cup)
  • 1/4 cup balsamic vinegar
  • 1 tsp dried Italian herbs
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, balsamic vinegar, garlic powder, honey, salt, pepper, and dried herbs.
  3. Marinate chicken in half of the marinade for at least 20 minutes.
  4. While marinating, wash and halve the potatoes if large; toss them in the remaining marinade.
  5. Place marinated chicken on one side of the baking sheet and arrange potatoes on the other side.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F and potatoes are tender.
