Instructions
- Preheat oven to 300°F (150°C).
- Season short ribs with salt and pepper on all sides.
- In a large Dutch oven, heat oil over medium-high heat and sear the ribs until browned (3-4 minutes per side). Remove ribs from the pot.
- Add onions and garlic to the pot; sauté until fragrant and golden.
- Pour in beef broth and red wine; scrape up any browned bits. Add thyme.
- Return short ribs to the pot, cover, and braise in the oven for about 3 hours until fork-tender.
