  • 1 cup long-grain white rice
  • 1 cup low-sodium chicken broth
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients and chop the bell peppers, onion, and garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté onions until translucent; add garlic and bell peppers, cooking until softened (about three minutes).
  3. Stir in shrimp and cook until pink (about four minutes). Add half of the Cajun seasoning.
  4. Mix in uncooked rice and chicken broth along with the remaining Cajun seasoning; stir well.
  5. Bring to a boil; reduce heat to low, cover tightly, and simmer for about 20 minutes until rice is cooked through.
  6. Fluff rice with a fork before serving; garnish with fresh herbs if desired.
