  • 1 lb shrimp (peeled and deveined)
  • 8 oz rice noodles or egg noodles
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (julienned)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1 inch fresh ginger (minced)

Instructions

  1. 1. Prepare all ingredients by chopping vegetables and mincing garlic and ginger.
  2. 2. Boil water in a large pot, add noodles, and cook according to package instructions until al dente. Drain and set aside.
  3. 3. In a skillet or wok over medium-high heat, add oil and sauté shrimp for 2-3 minutes until pink. Remove and set aside.
  4. 4. In the same skillet, add more oil if needed. Sauté garlic and ginger until fragrant, then add bell peppers, broccoli, and carrots. Stir-fry for about 5 minutes until tender-crisp.
  5. 5. Return shrimp to the skillet along with the drained noodles. Pour soy sauce and sesame oil over everything; toss gently to combine.
  6. 6. Serve hot, drizzling any remaining sauce over the top for extra flavor.
