  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 tbsp olive oil
  • ½ cup shredded cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a large baking dish with nonstick spray.
  2. Peel and dice sweet potatoes into small cubes, then toss with olive oil, salt, pepper, and herbs of choice.
  3. In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and ground turkey; cook until browned.
  4. Stir in spinach until wilted (about 2 minutes).
  5. In the prepared baking dish, layer half the sweet potatoes, spoon the turkey mixture on top, and add the remaining sweet potatoes.
  6. Bake for 25-30 minutes until bubbly; if using cheese, sprinkle on top during the last five minutes.
