  • 1 lb lean ground beef
  • 1 packet taco seasoning (1 oz)
  • 1 cup salsa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese (Monterey Jack and Cheddar blend)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in taco seasoning, salsa, black beans, and corn; let simmer for about 5 minutes.
  4. In a greased baking dish, layer half of the beef mixture, followed by half of the tortilla chips and half of the cheese. Repeat layers.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly and golden.
  6. Let sit for 5 minutes before serving.
