  • 1 lb lean ground beef or turkey
  • 1 packet (1 oz) taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp fresh lime juice

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and mix in taco seasoning.
  3. In a large bowl, combine cooked pasta, browned meat, cherry tomatoes, black beans, corn, and cheddar cheese.
  4. In a separate bowl, mix sour cream and lime juice until smooth. Pour over the pasta mixture and toss gently to coat.
  5. Cover and chill in the refrigerator for at least 1 hour to meld flavors before serving.
