- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or fresh)
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream (or Greek yogurt)
- 2 tbsp fresh lime juice
Instructions
- Cook the rotini pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse with cold water.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and mix in taco seasoning.
- In a large bowl, combine cooked pasta, browned meat, cherry tomatoes, black beans, corn, and cheddar cheese.
