  • 4 medium russet potatoes (about 2 lbs)
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 6 strips cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • 1 cup plain breadcrumbs

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and poke holes in the potatoes. Bake directly on the oven rack for 45-60 minutes until tender.
  2. Once cooled, cut the potatoes in half lengthwise and scoop out the insides into a bowl, leaving some potato in the skins for support.
  3. Mix the scooped potato with sour cream, 1.5 cups of cheddar cheese, crumbled bacon, and green onions until creamy.
  4. Spoon the mixture back into the potato skins. Top with remaining cheddar cheese and breadcrumbs.
  5. Bake at 375°F (190°C) for about 20-25 minutes until golden brown.
