  • 4 medium zucchinis (about 1.5 lbs), sliced into thin rounds
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • 1 cup pepperoni slices (or turkey pepperoni for a healthier option)
  • 2 tsp Italian seasoning
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Layer half of the sliced zucchini at the bottom of the dish. Pour half of the marinara sauce over the zucchini and sprinkle with half of the mozzarella cheese. Add half of the pepperoni slices and a sprinkle of Italian seasoning.
  3. Repeat the layering process with the remaining zucchini, marinara sauce, cheese, pepperoni, bell peppers, and onions.
  4. Cover loosely with aluminum foil and bake for 30 minutes. Then remove foil and bake uncovered for an additional 15-20 minutes until golden brown and bubbling.
  5. Let cool slightly before serving.
