- 3 medium zucchinis, sliced thinly
- 1 pound lean ground beef or turkey
- 1 jar (about 2 cups) pizza sauce
- 2 cups shredded mozzarella cheese
- 1 tablespoon Italian seasoning
- Pepperoni slices (to taste)
Instructions
- Preheat oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook the ground meat until browned (7-10 minutes). Drain excess fat and stir in pizza sauce and Italian seasoning.
- Layer half of the zucchini slices at the bottom of the baking dish. Spoon half of the meat mixture over the zucchini and sprinkle with half of the mozzarella cheese.
- Repeat layering with remaining zucchini, meat mixture, and top with remaining cheese and pepperoni slices.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
